Fermentation and Drying of Cocoa Beans

Once the cocoa beans are harvested, the next crucial step is fermentation. This process enhances the beans’ flavor by allowing them to develop their unique characteristics. After fermentation, the beans are carefully dried, preserving their quality and taste. We partner with our farmers to harvest and ferment the cocoa beans using specific techniques and ensure fair compensation for their brilliant work.

Roasting Cocoa: Unveiling the Aromas

Roasting is a pivotal stage in the chocolate-making process. It’s where the cocoa beans truly start to shine. Our master roaster skillfully roasts the beans, unlocking unique aromas and flavors that will dance on your taste buds.

Cracking and Winnowing Cocoa

After roasting, the beans are cracked open, revealing the cocoa nibs within. These nibs are separated from the husks in a process called winnowing. The nibs are what contain the essence of chocolate flavor.

Conching: The Art of Refinement

Conching or refining is where the magic happens. This delicate process involves mixing and aerating the chocolate over an extended period. At this stage, we may add fruit, nuts, and/or spices to create delicious variants. The result is a smooth, velvety texture that melts in your mouth, allowing the true character of the chocolate to shine through.

Tempering and Molding Chocolate

We meticulously temper the chocolate to achieve the perfect sheen and snap in our chocolate bars, by increasing and decreasing the temperature alternately. It’s a precise art that ensures our chocolate have the signature Loom Chocolate quality. After tempering, the chocolate is molded into beautiful bars, chips, or blocks ready to be wrapped and shared with you.
